Funfetti Fairy Cakes

Hi chums!

One of my favourite hobbies is baking because it's so fun and relaxing I like to put on some music and just chill out. Something which I've been really loving at the moment is Funfetti Fairy Cakes. It's winter here in the UK and of course it's super grey, cloudy, rainy and generally grim outside (I know we always complain about the weather!). So the best way to get your mind of it is to bake something bright and colourful and these cakes definitely fill that criteria.

Essentially they're just normal fairy cakes with sprinkles added, but in my opinion they are much better and much tastier than the average fairy cake!

They are so easy to make but also look really impressive. I made these for my friend's birthday the other day and everyone seemed to love them. When you bite into them there are multi-coloured dots inside which is so pretty!

Ingredients:

100g Butter
100g Sugar
2 eggs
100g Self Raising Flour
1tsp Baking Powder
1tsp Vanilla Essence
As many multicoloured sprinkles as you like!
Betty Crocker Vanilla Icing (obviously you can make your own if you like)
More sprinkles for decoractions

Instructions:

1. Put the butter and sugar in a mixing bowl and cream together.
2. Beat in the eggs.
3. Add the flour and baking powder a bit at a time and fold in.
4. Add the vanilla essence and stir.
5. Mix in your sprinkles (but remember to keep some for decoration).
6. Bake in the oven at 180C for 10-15 mins.
7. Ice your cakes and add some sprinkles on top!

But if you don't particularly like baking or want to make a quick cake, Betty Crocker has a cake mixture which is really yummy too so I will link it here. I have used this cake mixture before (even though I personally think it's more fun to start from scratch!) so I'll leave a few pictures below so you can see how it turns out.

My sister and I made this cake for my mum's birthday and I promise you it was super yummy!

Thank you for reading this post!

PS I think in the US these are called cupcakes instead of fairy cakes

Valentine's Day Baking

Hi chums!

So Valentine's Day is coming up this weekend and so my sister and I decided that we wanted to bake something super yummy but along the Valentine's Day theme. After looking on the internet for different ideas we went for white chocolate and raspberry biscuits.

We found the recipe from this website and were really pleased with how they turned out!

They are so tasty so I would definitely recommend giving them ago but they are addictive so don't leave them next to you because they'll disappear very quickly! I would also recommend having a hot cup of tea with it because tea makes everything even better!

I hope you have a lovely Valentine's Day!

Love
